Fruit and Yoghurt Slice

This slice is deliciously moist and very easy to make.  The original recipe had a lot more butter and sugar in it but I have reduced the amounts as it really wasn't necessary. I made it with plums this time around but the recipe allows for a mixture of fruits depending on what's available.  Make sure you keep it in the refrigerator as it will go bad in warm conditions due to the yoghurt.

Plum and Yoghurt Slice
150 grams softened butter

¾ cup castor sugar

1½ cups of plain flour

1 teaspoon of vanilla essence

2 teaspoons of baking powder

3 small eggs (2 large eggs)

¾ cup plain yoghurt

1 teaspoon of cinnamon

Fruit – I used 8-10 good-sized plums 

Other options – 3 - 4 large granny smiths/pears, 4 large stalks of rhubarb, 8 apricots, a couple of punnets of berries, 4-6 large peaches etc…or a combination of any of the above.


Preheat oven to 180 degrees and line slice tin with baking paper.


Beat butter and sugar with electric mixer in a bowl until light and creamy.  


Add vanilla then eggs one at a time and mix well.  


Fold in sifted dry ingredients (flour, cinnamon and baking powder) until well mixed.  


Fold in yoghurt in batches.  


Add 2/3 of the fruit and mix through.


Spread mixture in slice tin.


Add left over fruit on top and press down lightly. (I sprinkle demerara sugar and cinnamon on top)


Put in oven and bake for 30-40 minutes until firm in the middle or skewer comes out clean.


Allow to cool, slice into individual portions and serve.  Can be served warm (or reheated) and goes deliciously well with ice-cream or cream.
